Pork Liver Pate

Pork Liver Pate is really quick and simple to make.  You will need:
  • 2 finely chopped shallots
  • 2 finely chopped garlic cloves
  • 3/4 lb pork liver, cut into small pieces
  • 1/2 lb unsmoked, rindless back bacon, cut into pieces
  • 2 eggs
  • 1/4 tsp allspice
  • 3 tbsp port
  • 2 tbsp cognac
  • 1/2 tsp mixed herbs
  • 1 1/2 tsp salt
  • Pepper
Puree the shallots, garlic, pork liver and back bacon in a food processor.
Gradually add the eggs, allspice, port, cognac, mixed herbs and salt and pepper.
Puree until smooth.
You will need a terrine of about 2.25pints.  Spoon the puree into the terrine.  Press down well.
Cover and microwave on MEDIUM-HIGH for 10 minutes.
Leave the terrine to cool at room temperature for 15 minutes, then put a small plate with a heavy weight on top and chill in the refrigerator for at least 24 hours.
